Oven Roasted Veggie Tacos

Ingredients
- 6 cups sliced vegetabes (such as onion, bell peppers, zucchini, mushrooms)
- 1/4 cup vegetable oil
- 1 packet (35.4 grams) Taco Seasoning Mix - Regular
- 1 can refried beans
- 1/2 cup Salsa - Thick & Chunky (Medium)
- 1 packet Taco Shells (12)
- 1/2 cup shredded cheddar or processed cheese for toppings
Method
Preheat the oven at 450°F. Move the oven rack to the lowest position.
Toss the vegetables with vegetable oil in a large bowl. Stir in the seasoning mix to coat. Spread onto the baking sheet and bake for about 12 to 15 minutes.
Combine beans and salsa in medium bowl. Fill taco shells with the bean mixture. Bake for 1 to 2 minutes.
Fill in the taco shells with 1/4 cup vegetable mixture and top with shredded cheese.
